Burrata Salad

If you are yet to try burrata, you won’t be disappointed - its like a combination of buffalo mozzarella with a soft inside, all over delicious and perfectly paired with Italian wine.

I use a mix of tomatoes ~ roma, truss, heirloom all work well, I like to use all three varieties to boost my plant food diversity and give my gut microbiome a diverse diet!

Ingredients:

1 Burrata

3-4 Tomatoes (Heirloom, Truss, Roma, Green, Yellow, Red)

1 bunch of micro-greens or sprouts

1 bunch of fresh basil

1 tablespoon balsamic vinegar

2 tablespoons extra virgin olive oil

Slice your tomatoes and spread across a plate.

Spread your micro-greens and fresh basil across the tomatoes. Mix balsamic vinegar and olive oil together, and pour over tomatoes and greens.

Add your burrata on top and add a crack of salt and pepper. When your ready to eat, pull apart your burrata, letting the inside ooze out and spreading the burrata across the plate.

Serve with some chicken or veggies skewers, baked fish or with some home made pizza & a glass of Italian white wine!
