Haloumi and Mixed Bean Taco Recipe

These haloumi and bean tacos are a great way to add diversity to your gut health and add more plants into your diet. If you are gluten free, swap the wheat tortillas for gluten free options, or swap to a cos lettuce cup if you don’t like gluten free wraps (I don’t blame you if you don’t!).

You’ll need:

  • Wholewheat tortillas

  • Cherry tomatoes

  • Avocado

  • Cucumber

  • Red onion

  • small tin of corn kernels (or a fresh cob of corn)

  • 1 packet of haloumi cheese

  • 1 can tinned 4 bean mix

  • paprika spice

  • cumin spice

  • 2 cloves of garlic

  • Greek yogurt

  • 1 lime

Start by slicing 3/4 of your red onion and frying in extra virgin olive oil. Chop finely the other 1/4 and add to a bowl (this will be your veggie salsa bowl).

Crush, peel and chop your garlic and add to the pan. Fry off your garlic and onion until lightly browned.

Rinse your beans well, and add them to the pan with the onion and garlic. Drain and rinse your corn kernels (r cut the off the cob) and add them to the pan with the beans, then add your spices; cumin and paprika - leave on heat for about 5 minutes, stirring occasionally.

In the meantime, chop your cherry tomatoes and cucumber and add to the red onion bowl - squeeze a bit of lime juice on top and leave until serving.

For the guac: squash your avocado completely, and add the other half of the lime juice + a bit of salt and pepper.

Now, slice your haloumi. Push your bean mix to one side, and fry up your haloumi in the same pan (your haloumi will get the spices and it’s less washing up - win win!) Flip when one side is golden then turn off the heat.

Warm up your tortillas in the microwave or in the oven (careful they don’t get toasted though! and please heat the tortillas on a ceramic plate NOT in their plastic bag!

Once warm, spread your guac on the base, followed by veggie salsa, beans then the haloumi - I like to top with a teaspoon of greek yogurt.

This recipe makes enough for about 6 small-medium tacos, if you’re cooking for more people, increase the beans and veggies, haloumi and guac.

There is no set serving size of these per person, enjoy as many as you feel comfortable, this may be 1, 2, 3 or 4; it wil depend not only on your hunger but also the size of the tortillas (or lettuce cup if your going GF plant option!) trust your intuitive body cues and if in doubt, wait 5 minutes to decide if you’re still hungry or they just taste really really good ;)
