Vegan choc chip oat cookies

These cookies are very yummy and vegan! They have 3 different types of fibre in them so they get a gut health tick of approval as well. Enjoy!

Ingredients

2 tablespoons of cashew butter

1 tablespoon of chia seeds + 1/3 cup (80ml) of water: this makes the chia ‘egg’

1 cup of quick oats

1/2 cup of almond meal

1/3 cup (80ml) soy milk

1/3 cup of raw sugar

2 tablespoons of cacao nibs

Method

~ Stir the chia seeds in with the water and put it aside to thicken.

~ Mix together the oats, sugar, almond meal

~ Add the cashew butter, milk and cacao nibs

~ Stir in the chia egg

~ Cook in the oven for 15-20 minutes on 180 degrees
